Eating healthy when you’re back to busy school nights or back to overly full homeschooling schedules is not an easy transition. Back to school time is such a busy time for all families and as an exhausted mom, myself, I often don’t have the time or energy to cook a balanced meal. We want our families to eat good healthy food, but it’s not always practical.
Easy to-go foods are packed with too much salt, sugar, and other less than desirable ingredients. Even if you do find a healthy option to chow down before your child’s game practice or dance class, it’s rare that vegetables would be included. Seems like an ongoing question, but how do we get our kids to eat more vegetables? And not just the kids! I’m just as guilty of not eating enough vegetables when constantly on the run or getting home late so many nights a week. I want to be a good example in teaching healthy habits as well as feel good and keep my body strong and healthy, too.

Honestly, I’m not a big fan of salads, but these looked absolutely delicious! They are packaged as single servings and fit comfortably in a lunch box. The salads even included a fork!
